Hope everybody loves this dish as much as I do. It’s fresh, quick and easy! Uses things from the garden like tomatoes and basil and only takes 20 minutes to make from start to finish.

For topping. In a small bowl combine 1 teaspoon of finely diced shallot, 1/2 cup of cherry or grape tomatoes quartered, finely chopped basil. Add salt and pepper to taste, 1 tablespoon lemon juice and 1 tablespoon olive oil and stir. Set aside.

Try to use very ripe tomatoes for this step, the juicer the better. I used 3 smallish medium tomatoes from the garden. Give the tomatoes a rough chop and place them in a blender with 3 eggs and a pinch of salt and pepper. Blend on medium speed till just blended, making sure to leave little flecks of tomato so that you can see it in the French toast.

Melt 2 tablespoons of butter in a large skillet on medium heat.

Dip your bread slices into the tomato egg mixture. Coat both sides and edges.

Place your French toasts in the pan and cook both sides until golden brown. Add more butter as you need.
